TURKEY - APPLE SOUP 
2 c. apple cider or juice
2 c. chicken broth
8 oz. fresh asparagus, cut into 1 inch pieces
1/2 c. shredded carrot
1/4 c. sliced green onion
2 tsp. grated fresh ginger
1/2 tsp. salt
2 c. cooked turkey, cubed
1 med. apple, sliced thin

In a large saucepan, combine apple cider, chicken broth, asparagus, carrots, onions, ginger, and salt. Bring to boiling; reduce heat. Cover and simmer for 10 minutes or until asparagus is crisp-tender. Add turkey; heat through. Float apple slices on top of each serving.
