HONEY-WHEAT MUFFINS 
1 c. all-purpose flour
1/2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 beaten egg
1/2 c. milk
1/2 c. honey
1/4 c. cooking oil
1/2 tsp. finely shredded lemon peel

Heat oven to 375 degrees. Stir together all-purpose flour, whole wheat flour, baking powder and salt; make a well in the center. Combine egg, milk, honey, oil and lemon peel; add all at once to dry ingredients, stirring just until moistened (batter should be lumpy). Grease muffin cups or line with paper bake cups; fill 2/3 full. Bake in 375 degree oven for about 20 minutes. Makes 12.

SUNFLOWER SEED MUFFINS: Prepare Honey-Wheat Muffins as above, except stir 1/2 cup shelled sunflower seeds into the flour mixture. Makes 12 muffins.
