LEMON CURD 
1 c. butter
2 1/4 c. sugar
1/2 c. lemon juice
4 beaten eggs

Cook in double boiler for 45 minutes to 1 hour or until thick. Pour into sterile canning jars, put on lid and band. Process in boiling water bath for 5 minutes. Makes about 4 (8 oz.) jars. Good to make at holidays for gifts.
