BAKED ACORN SQUASH 
2 med. acorn squash
Boiling water
1/4 c. firmly packed brown sugar
2 tbsp. orange flavored instant breakfast drink
2 tbsp. chopped pecans
Salt
1 tbsp. butter

Cut squash in half lengthwise; remove seeds and fiber. Place cut sides down, in shallow baking pan or dish; add boiling water to depth of 1/2". Bake at 375 degrees for about 45 minutes or until just tender. Meanwhile, combine brown sugar, instant breakfast drink and chopped pecans; mix well. Turn squash cut side up, sprinkle center of each half with salt and brown sugar mixture. Dot with butter. Continue baking, basting occasionally until tender, about 30 minutes. Makes 4 servings.
