POPPY SEED CHICKEN 
6 skinless chicken breast, boiled & diced
1 can cream of chicken soup
8 oz. sour cream
1 stack Ritz crackers, rolled to crumbs
3/4 stick butter
2 tbsp. poppy seed

Preheat oven to 350 degrees. Put cooked and diced chicken in a large bowl. Mix in soup and sour cream. Set aside. In frying pan, melt butter and add crushed crackers and poppy seed. Cook 2 to 3 minutes, stirring occasionally. Put chicken mixture in a casserole dish. Sprinkle crumbs on top. Bake at 350 degrees for about 20 minutes until bubbly. Serves 4 to 6.
