CABBAGE - CHEDDAR CHOWDER | |
1 lb. ground beef 1 c. sliced celery 1 sm. onion, chopped 1/4 c. bell pepper, chopped 1/2 med. head cabbage, coarsely shredded 1/2 c. water 3 c. milk 2 c. shredded cheddar cheese 3 tbsp. flour 1 1/2 tsp. salt 1/8 tsp. nutmeg 1/8 tsp. pepper 2 tbsp. sliced pimento Brown ground beef, celery, onion and bell pepper in Dutch oven until vegetables are tender; drain. Stir in cabbage and water. Cover and cook over low heat, stirring occasionally until cabbage is cooked, about 10 minutes. Stir in milk, cheese, flour, salt, nutmeg and pepper. Heat until boiling, stirring constantly. Boil and stir 1 minute. Garnish each serving with pimento. |
