COFFEE CAKE MUFFINS 
1 1/2 c. flour
1/2 c. sugar
1/2 tsp. salt
2 tbsp. baking powder
1/4 c. shortening
1 egg, beaten
1/2 c. milk
1/4 c. packed brown sugar
1/4 c. chopped walnuts or pieces
1 tbsp. flour
1 tbsp. butter, softened
1 tsp. ground cinnamon

Stir together 1 1/2 cups flour, granulated sugar, baking powder and salt. Cut in shortening until mixture looks like coarse crumbs. Combine egg and milk and add all at once to flour mixture until just moistened. Batter will be lumpy.

Combine brown sugar, nuts, 1 tablespoon flour, butter and cinnamon. Spoon half the batter into 12 greased or paper-lined muffin cups. Sprinkle with nut mixture. Top with remaining batter. Bake at 375 degrees for 20-25 minutes. Makes 12 muffins.
