LITE SUGAR COOKIES | |
1/2 c. unsalted stick butter 4 oz. reduced calorie cream cheese 1 lg. egg 1 tsp. vanilla 2 1/4 c. flour 1/2 c. sugar 1/2 tsp. baking powder Cream butter and cream cheese until smooth. Add egg and vanilla, mix well. Combine dry ingredients then add to egg mixture. Divide dough in half and wrap each half in plastic wrap (or put in zip-lock bag) and refrigerate for at least 3 hours. Roll out one portion of the dough on lightly floured board, cut into desired shapes. Bake at 350 for 8-10 minutes. 3 cookies = 35 calories or 1 FA, 1/2 B, 30 C on Weight Watcher program. If you are a busy working person and need to save time, here is a tip: Use your food processor. Follow directions except start the mixing in your "handy-dandy" food processor. The mixing takes about half the time! Also, instead of rolling the dough out, pinch off a piece about the size of a walnut, roll in sugar (just a little), flatten out with your hand and bake. Or you can use a fork to press a criss-cross pattern on it like peanut butter cookies. Who cares what they look like when you want a cookie and you're on a diet? |
