PINEAPPLE CARROT CAKE | |
1 1/2 c. salad oil 2 c. sugar 2 tsp. baking soda 2 tsp. cinnamon 1 c. grated carrots 1 c. coconut 1 c. chopped nuts 3 eggs 2 1/2 c. flour 1 tsp. salt 2 tsp. vanilla 1 c. crushed pineapple, well drained Beat well oil, eggs, and sugar. Add vanilla. Mix together dry ingredients. Stir in and blend with egg mixture. Add remaining ingredients. Put in a greased and floured bundt pan. Bake at 350 degrees for 45-50 minutes. Frost with Cream Cheese Frosting. |
