MANHATTAN CLAM CHOWDER | |
4-5 slices bacon, finely diced 2 qt. strained clam juice or broth (may be part water) 1 1/2 tsp. salt 1 c. finely diced celery 1 c. finely diced carrots 1 c. chopped onions 2 c. diced potatoes 1 c. diced canned tomatoes 1/2 tsp. thyme 1/4 tsp. pepper 1 to 1 1/2 dozen clams, diced Fry bacon until golden, not brown. Add clam juice or broth. Simmer 5-10 minutes. Add salt. Add all vegetables except potatoes and tomatoes, simmer 20-25 minutes. Add potatoes and tomatoes, thyme, and pepper. Cook another 20 minutes. Add clams and cook another 15 minutes. 6 servings. |
