BANANA PRUNE CAKE | |
2/3 c. shortening 2 1/2 c. flour 1 1/2 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 c. mashed ripe bananas 2/3 c. milk 2 eggs 1 c. chopped, pitted, cooked prunes 1/2 c. chopped walnuts Stir shortening to soften. Sift in dry ingredients. Add bananas and 1/2 of the milk. Mix until flour is dampened, then beat 2 minutes. Add eggs and rest of milk. Beat 2 minutes more. Fold in prunes and nuts. Bake in 350 degree oven for 40 to 45 minutes. Frost when cool with brown sugar frosting. |
