ZUCCHINI SQUASH CAKE 
3 c. grated, unpeeled zucchini
3 c. sugar
3 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 1/2 tsp. cinnamon
1 1/2 c. cooking oil
4 eggs (I use egg whites)
1 c. chopped nuts

Sift dry ingredients together. Add eggs, oil, zucchini, vanilla and nuts; mix well. Pour in cookie sheet. Bake 1 hour and 15 minutes at 350 degrees.

ICING:

13 oz. pkg. cream cheese
2 c. powdered sugar
1 stick butter
1 tsp. vanilla

Mix well and spread on cake and sprinkle with chopped nuts and coconut.
