CARROT DESSERT (HALWA) 
1 lb. carrots
2 c. milk
2 c. butter flavor shortening
small tub Ricotta cheese
1 1/2 c. sugar
4 cardamon seeds, ground
Some cut almonds browned in oil

Clean carrots, process in blender. Boil them in milk. When the milk boils, add shortening, Ricotta cheese and sugar. Cook the whole mix until it is dry and brown in color. Sprinkle with ground cardamons and almonds.
