CHICKEN AND RICE SALAD 
1 c. cooked long grain rice
1/2 c. cooked diced chicken
1/4 c. cooked diced ham
2 tbsp. sliced green pimento stuffed olives
1 tbsp. minced onion
1/2 c. sliced celery
1 c. mayonnaise
1 tbsp. lemon juice
Salt and black pepper to taste
Lettuce leaves
2 avocado, unpeeled
2 tomatoes, sliced

Combine all the ingredients in a mixing bowl, except for the lettuce, avocado, and tomatoes. Mix together until well combined. Line the outer edges of a large round serving platter with the lettuce leaves. Slice the avocados but do not peel. Alternate the avocado and tomato slices in a circle around the outer edges of the platter. Mound the chicken mixture in the middle. Or configure on individual plates. Serves 4.
