BASIC PIZZA DOUGH 
1 c. warm water
1 pkg. active dry yeast
2 1/2-3 c. unbleached flour
2 tbsp. extra virgin olive oil
1/2 tsp. salt

Combine water, yeast, and 1 1/2 cup flour. Mix well. Add oil, salt, and remaining flour. Work together until dough holds shape.

Place dough on floured surface, and knead until smooth and elastic (5 minutes). If it becomes sticky, sprinkle a bit of flour.

Transfer dough to lightly oiled bowl. Cover bowl with plastic and let dough rest until doubled in size (1 hour).

Once risen, place on lightly floured surface, and divide into two or more parts, and roll into balls. Cover with towel and rest for 15-20 minutes.

2-12" pizzas (2 portions)
4-6" pizzas (4 portions)
8-3" pizzas (8 portions)
