MEXICAN CASSEROLE 
1 lb. ground beef
1 c. grated cheese
1 can Ranch style beans
1 can Ranch style Spanish rice or 1 pkg. dry Spanish rice prepared according to directions on pkg.
1 can chopped stewed tomatoes
1 sm. onion, chopped

Brown meat and onion. Drain grease and add beans, rice and tomatoes. Bake uncovered in 350 degree oven for 40-45 minutes. Top with cheese and return it to oven until cheese melts and is bubbly. Serve with corn bread. If there is any left, it gets better the second day!
