BREADED PORK CHOPS 
6 pork chops (3/4-1" thick)
2 egg yolks
4 tbsp. cold water
2 tsp. salt
1 1/2 c. cracker crumbs
4 tbsp. fat (butter)
6 slices onion
1/2 c. hot water

Thoroughly beat egg yolks, salt and cold water. Heat fat in frying pan. Wipe chops with damp cloth, dip into egg mixture and then into cracker crumbs. Place in hot fat and brown well on both sides. Lay onion slices on top of chops and add hot water. Cover and bake for 45 minutes at 350 degrees.
