MINT COOKIES 
2 egg whites
Pinch salt
1/2 tsp. cream of tartar
3/4 c. sugar
1/2 tsp. mint extract
Food coloring, few drops
6 oz. pkg. chocolate chips

Mix egg whites, salt, and cream of tartar until stiff. Gradually add sugar, food coloring and continue beating. Fold in chocolate chips. Drop cookies on cookie sheet covered with wax paper. PREHEAT oven to 375 degrees. Turn off oven and put in oven immediately. (DO NOT OPEN UNTIL NEXT DAY.)
