SHRIMP IN LOBSTER SAUCE 
1/4 lb. ground or diced pork
2 tbsp. oil
1 stalk celery, diced thin
2 c. chicken stock
1 lb. cleaned raw shrimp
2 tsp. soy sauce
4 scallions, minced
1 tsp. salt
1/3 tsp. pepper
1 clove garlic
2 eggs
2 tbsp. cornstarch
1/2 c. water
1/2 tsp. sugar

Mix pork, scallions, salt, pepper, garlic and saute. Add celery and cook one minute. Add shrimp, and chicken stock and cook 7 minutes. Mix cornstarch with water and soy sauce and sugar - add this thickening - cook 4 minutes longer. Beat in eggs - slowly pour eggs in - stirring constantly and cook 1 minute. Serve over rice.
