CHIPPED BEEF AND NOODLE
CASSEROLE
 
7 oz. broad noodles
1 1/2 qts. boiling water
1 tsp. salt
3 tbsp. butter
3 tbsp. flour
1 1/2 c. evaporated milk
1 1/2 c. water
1/4 lb. chipped beef
1 c. grated cheese
2 tbsp. fine bread crumbs
1 tbsp. melted butter

drop noodles in boiling water. Add salt and cook rapidly until noodles are tender, about 8 minutes; drain.

Meanwhile make white sauce with butter, flour, milk and water, stirring constantly until thickened. Add beef and all but 2 tablespoons of cheese and stir until cheese melts.

Arrange noodles and sauce in layers in a buttered casserole. Mix remaining cheese with bread crumbs and melted butter and sprinkle over top. Bake at 375 degrees for about 20 minutes. 5 servings.
