1 (9 inch) banana
2 slices bread
2 eggs
2 pkgs. Alba crackers
1/2 tsp. cream of tartar
1/2 tsp. baking soda

Cut up banana; break up bread. Add eggs, Alba crackers and baking soda.

Spray cookie sheet with spray oil. Spread mixture thin over cookie sheet. Bake at 350 degrees for 10 minutes. Take off pan immediately; try not to break.

FILLING:

2/3 c. Ricotta cheese (low fat)
1 tsp. vanilla
2 pkgs. sweetener

Mix together. Spread filling over "cake" and roll up. Refrigerate.
