NAVY BEAN SOUP WITH BACON 
2 c. dried navy beans (pea beans), soaked overnight
8 strips bacon
2 cloves garlic, minced
1 onion, chopped
2 carrots, peeled and chopped
1 1/2 c. smoked ham, diced
1 ham bone or 8 c. beef broth
Salt and black pepper to taste

In a heavy stock pot, cover ham bone with 10 cups of water. Add beans, garlic, onions and carrots; simmer for 3-4 hours. Skim any scum that rises to the surface.

If you can't obtain a ham bone, simmer all ingredients in beef broth. Stir in diced ham and season. Garnish with crisp crumbled bacon. Enjoy!
