BANANA MUFFINS 
1/2 c. shortening
1 c. brown sugar
2 eggs
1/2 c. buttermilk
2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3 ripe bananas, mashed
1/2 tsp. vanilla
1/2 c. nuts

Cream shortening and sugar; add eggs and milk. Sift dry ingredients and add to the creamed mixture. Fold in mashed bananas, vanilla and nuts. Do not over mix. Fill paper lined muffin tins. Bake 350 degrees for 25 minutes. Makes 18 large or 24 small muffins.
