APPLE STRUDEL PUFF
2 tbsp. butter
3 eggs
3/4 c. sifted flour
3/4 c. milk
1 (20 oz.) can apple pie filling
1/4 c. light brown sugar

Preheat oven to 500 degrees. Place butter in 10 inch skillet with oven-proof handle; set in oven to melt butter while oven heats. Combine eggs, flour and milk in a medium size bowl; beat until smooth. Remove skillet form oven and tip to coat side with butter; pour in batter. Place in oven; turn temperature to 425 degrees. Bake 20 minutes, or until puffed and golden.

While puff bakes, place apples in a medium size saucepan and heat until bubbly. Spoon into puff as soon as it comes from the oven; sprinkle brown sugar on top. Cut puff into wedges; place on serving plates; serve hot. Serves 4.

NOTE: Batter puffs into all kinds of fascinating shapes as it bakes, and each recipe you make may look different. If your oven does not have a glass door, DO NOT be tempted to peek until baking is finished.
