PAVLOVA 
4 egg whites
4 tsp. cornstarch
2/3 c. sugar
2 1/2 tbsp. cold water
1 3/4 tsp. vinegar

Preheat oven to 300 degrees. In a small bowl (not plastic) beat together the egg whites, vinegar, water and cornstarch. Beat at high speed until mixture is very stiff and peaks hold their form. This will take 4-8 minutes. Switch mixer to slowest speed and sprinkle sugar evenly into the mix. Switch mixer to highest speed for ONE MINUTE ONLY. Heap the mixture onto a 9 inch dinner plate and pile it into a very high dome.

Pavlova will change shape during cooking. Place in preheated oven on middle shelf for 3/4-1 hour. Cool. Before serving, top with 1/2 pint fresh cream whipped and decorate with fresh fruit such as kiwi fruit, strawberries or other. Serve. (Pavlova will be dry to the touch on outside surface but still soft in the center.)
