JANIS HAYNES'S CRABMEAT OLE' 
3/4 - 1 c. cooked rice
1 can Rotel tomatoes
1/3 c. chopped green pepper
1/3 c. chopped celery
1/3 c. chopped onion
1/2 stick butter
Tony's Creole seasoning
Garlic powder
Salt and pepper
Paprika
Jalapeno pepper
1 - 2 sm. cans crabmeat
1/2 c. grated cheddar cheese

Saute onions, green peppers, celery and onion in butter until tender. Add rice, Rotel tomatoes and seasonings to taste. Add crabmeat and half of grated cheese to mixture and mix well. Pour into 13 x 9 x 2 inch pan or other casserole dish. Top with remaining cheese and paprika. Bake for 15 minutes at 350 degrees. After removing from oven, top with jalapeno peppers.
