CAJUN CORNBREAD 
1 c. flour
1 tbsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 c. yellow cornmeal
2 eggs, slightly beaten
1/4 c. shortening
1/4 c. whipping cream
3/4 c. milk
1/2 c. finely chopped onion
3 jalapeno pepper seeds & veins removed

Preheat oven to 425 degrees. Sift flour and cornmeal, baking powder, salt and sugar. Mix with remaining ingredients, pour into cast iron skillet (oiled). Bake about 20 minutes or until set and golden.
