ASPARAGUS BAKE 
1 (10 1/2 oz.) can asparagus
1/4 c. chopped red or green pepper
1/3 c. mayonnaise
1/3 c. shredded mild Cheddar cheese (more, if drained)
1/4 c. sliced fresh green onions
1 egg white, beaten until stiff

Drain asparagus, reserving a few for garnish. Place in a shallow baking dish with red peppers. Combine mayonnaise with the cheese and onions. Fold in beaten egg whites. Spread over asparagus. Top with asparagus and then top all with more cheese.
