STUFFED RED SNAPPER 
4 lb. filets of red snapper
1 lb. shrimp, peeled and deveined
1 1/2 c. chopped onion
1/2 c. chopped celery
1 stick butter
1/2 tsp. sugar
1 tsp. salt
1/2 tsp. cayenne pepper and black pepper
4 eggs
3 stale hamburger buns
1 tbsp. flour
1/2 c. bread crumbs

Boil shrimp; drain and chop coarsely. Dice about 1 pound of filets; set aside. Saute onion and celery in butter; add sugar, salt and peppers. Stir in shrimp and 1 pound of chopped filets and cook for 5 minutes.

Combine crumbled hamburger buns, eggs, flour and bread crumbs in bowl; mix well. Add shrimp mixture. Stuff filets with mixture; season and butter each side. Broil in oven 10 minutes on each side. Serve with garlic butter.
