CURRY CHICKEN DELIGHT 
4 whole chicken breasts, skinned, halved lengthwise, and boned
1/3 c. all-purpose flour
4 slices bacon
1/4 c. honey
2 tbsp. prepared mustard
1/2 tsp. salt
1/2 tsp. curry powder
Hot cooked long grain and wild rice or hot cooked rice

Rinse chicken; pat dry with paper toweling. Coat chicken pieces with flour.

In a skillet cook bacon until crisp. Drain bacon on paper toweling; crumble and set aside. Reserve drippings.

Add chicken to skillet; slowly brown chicken on all sides in hot drippings about 10 minutes. Transfer chicken to an 8x8x2 inch baking dish. Bake chicken, uncovered, in a 350 degree oven for 30 minutes.

Combine honey, mustard, salt and curry powder, drizzle over chicken in baking dish. Bake, uncovered, 15 minutes more. Top with crumbled bacon. Serve with hot cooked rice. Makes 8 servings.
