MAKE YOUR OWN TACOS
MEAT SAUCE:

1 lb. ground beef
1 1/4 oz. pkg. taco seasoning mix
15 oz. can tomato puree
15 oz. can pinto beans, drained
1 med. onion, chopped
1/4 tsp. pepper, if desired

SALAD:

12 oz. pkg. corn chips
4-6 c. shredded lettuce
1-2 tomatoes, chopped
1 avocado, chopped
4 oz. (1 c.) shredded American or Cheddar cheese
Ranch style salad dressing

In slow cooker, combine all meat sauce ingredients. Cover; cook on high setting for 2 hours or on low setting for 6-8 hours. To serve, place corn chips on plates or in individual bowls. Top with meat mixture. Add desired amount of lettuce, tomatoes, avocado and cheese. Top with salad dressing. 8 servings.

For Microwave: In 1 1/2 quart microwave-safe casserole or dish, place ground beef and onion. Microwave on HIGH for 4-5 minutes, stirring once halfway through cooking. Add beans; mix well. Microwave on HIGH for 2-3 minutes or until beans are hot, stirring once halfway through cooking. Continue as directed above.

Tip: All ingredients may be set out in bowls so individuals can create their own taco salads.

Since microwave ovens vary in power, you may need to adjust your cooking time.
