ZUCCHINI SOUP 
1/4 c. butter
1 c. onion, chopped
2 1/2 c. chicken broth
1 1/2 lbs. zucchini, sliced round
1/2 tsp. salt
1/8 tsp. nutmeg
1 1/2 tsp. dried basil
Pinch of pepper

Melt butter, saute onion, add chicken broth and well scrubbed, sliced zucchini. Simmer for 15 minutes or until zucchini becomes soft. Put mixture through a blender to puree. Add seasonings and stir. Serve hot or cold.
