OKLAHOMA OPOSSUM | |
1 Opossum Salt & pepper 4 tbsp. butter 1/2 onion 3/4 c. bread crumbs 1 tsp. chopped parsley A little beef broth 1 tsp. Worcestershire sauce Rub the opossum inside and out with salt and pepper. Melt 3 tablespoons butter and brown the onion and the opossum's chopped liver. When well browned, add bread crumbs, parsley, salt, pepper and enough beef broth to moisten and stuff opossum. Sew up. Place in baking pan with 1 tablespoon of water and roast in 450 degree oven for 15 minutes. Lower heat to 350 degrees and cook until tender and brown. Baste frequently with 1/2 cup water, 1 tablespoon butter and Worcestershire sauce. |
