MOM'S COCONUT CAKE 
Cake:

1 box yellow cake mix
2 eggs
3 egg yolks

Mix cake layers following directions on box, except use 3 egg yolks plus 2 whole eggs.

Bake and allow to cool.

Frosting:

3 egg whites, beaten stiff
3 pkg. frozen coconut
1 c. sugar
whole milk, about 1 ptsp. or enough to mix
3 heaping tbsp. cornstarch, dissolve in water
lemon extract

Use double boiler. Bring water in bottom pan to a boil, then lower heat so that it doesn't boil over. In top pan, combine 3 stiffly beaten egg whites, 3 packages of frozen coconut, 1 cup of sugar and milk. Stir and heat for 30 minutes. When 30 minutes are almost up, add 3 tablespoons of cornstarch, which has been dissolved in enough water to make stiff.

This will thicken the frosting. Allow to cook and add lemon extract to taste, about 1 teaspoon at a time. Frost the cool cake.
