SWEET AND SOUR FRIED POTATOES 
1 med. onion, chopped
1/2 med. green pepper, chopped
1/2 c. butter
6 med. potatoes, cooked and sliced
1 tsp. salt
1/2 tsp. pepper
1/4 c. vinegar
2 tsp. sugar
1 tsp. dry mustard

Saute onion and green pepper in the butter in large skillet 2 to 3 minutes. Add potatoes and sprinkle with the salt and pepper. Brown slowly on both sides. Mix vinegar, 1 tablespoon water, the sugar and mustard and pour over potatoes. Lift gently so vinegar mixture goes all through potatoes.

NOTE: Part bacon fat can be used if desired. Reduce salt.
