LEMON - CARAWAY COOKIES 
1 egg
1 c. sugar
2 tbsp. lemon juice
1/2 c. shortening, softened
2 tsp. caraway seed
3 c. cake flour
1/2 tsp. baking soda
1/2 tsp. salt

Beat egg. Add sugar gradually and continue beating. Add lemon juice, shortening and caraway seed. Sift the dry ingredients and add. Make into a roll and wrap into waxed paper. Chill until firm enough to slice thin. Bake in a hot oven for 10 minutes. Makes 60 thin 2 1/2 inch cookies.
