BANANA NUT BREAD 
1/2 c. shortening (I use Crisco)
3/4 c. sugar
2 med. ripe mashed bananas
2 eggs, beaten
2 c. flour, sifted
1 tsp. baking soda
1 tsp. salt
1/2 c. pecans, chopped

Mix shortening and sugar, add bananas and eggs. Gradually add dry ingredients mixed with nuts. Blend thoroughly. Grease and flour loaf pan. Bake at 325 degrees for 1 hour and 15 minutes. Cool in pan 10 minutes. You can use favorite glaze if you like, but we just serve it hot with vanilla ice cream or ice milk and then use rest just cold.
