OLD FASHIONED NAVY BEAN SOUP | |
1 c. navy beans 1 qt. water 1/2 c. diced ham or ham bone 1 sm. clove garlic 1/4 tsp. salt 1/2 c. butter 3 slices bacon, diced 1 tbsp. finely chopped leek 1/2 c. chopped onion 1/4 c. chopped carrots 1/3 c. celery 2 tbsp. flour 1 c. diced tomatoes 1 c. milk 1/4 tsp. pepper Wash beans and soak overnight in cold water to cover. Add ham; heat to boiling. Cover and simmer 3 hours. Crush garlic with salt. Melt butter and add garlic salt, bacon, leek, and onion; cook until onion is yellow and bacon is crisp. Add flour and cook 2 minutes, stirring constantly. Add to beans with remaining vegetables except tomato and cook 3-4 hours. Add tomatoes the last 15 minutes. Just before serving, add milk and pepper. |
