BASIC CREPES 
1 c. all purpose flour
3/4 c. water
3/4 to 1 c. milk
Dash of salt
4 eggs
2 tbsp. butter

Sift flour and salt into bowl. Add water a little at a time, whisking constantly. Add egg, one at a time. Finally add milk, stirring vigorously, until batter is smooth. Melt butter and add to batter. Let batter stand for about one hour.

Heat a crepe iron or a small frying pan. Grease lightly. Ladle about 3 tablespoon batter on pan. Immediately tilt pan in all directions so batter covers bottom. Bake for about 1 minute or until lightly browned. Check by lifting crepe with a spatula. Quickly turn crepe over and bake on other side for 15 seconds. Prepare with appropriate filling and serve immediately.

Crepes may be frozen. Place square of foil between each crepe for easier handling and reheating.
