ZUCCHINI JELLY 
6 c. shredded zucchini
1/2 c. lemon juice
6 oz. strawberry Jello
6 c. sugar
1 c. crushed pineapple

Boil zucchini in small amount of water until clear. Add sugar, juice and pineapple. Stir well. Add Jello and let dissolve. Pour into hot jelly jars. Seal. Boil in water bath for 10 minutes.
