CARROT BREAD 
Combine:

1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon

Cream together in a larger bowl:

1 1/4 c. sugar
3/4 c. oil
2 eggs
1 tsp. vanilla

Pour flour mixture into egg mixture and beat until everything is moist.

Add:

1 c. grated carrots
1 c. chopped pecans

Bake in a greased and floured loaf pan 1 hour and 15 minutes. Loaf is done when toothpick comes out clean. Oven temp 350 degrees. Let pan cool approximately 10 minutes before removing bread.
