ONE-STEP POUND CAKE | |
2 1/4 c. unsifted all-purpose or unbleached flour 2 c. sugar 1 tsp. grated lemon, lime or orange rind 1/2 tsp. salt 1/2 tsp. baking soda 1 c. dairy sour cream 1 c. butter, softened 1 tsp. vanilla extract 3 eggs 1. Preheat oven to 325 degrees. Generously grease (using 1 tablespoon solid shortening) and lightly flour a 12-cup fluted or plain tube pan. 2. In large bowl, blend all ingredients at low speed until moistened. 3. Beat batter three minutes at medium speed. Pour batter into prepared pan. 4. Bake for 55 to 60 minutes or until toothpick inserted in center comes out clean. 5. Cook to lukewarm; invert into serving plate. Cool completely. Glaze, if desired, while still warm or cool completely and sprinkle with confectioners' sugar. Makes 10 inch ring cake. GLAZE: 1 c. confectioners' sugar 1 or 2 tbsp. lemon juice 1. In small bowl, blend glaze ingredients smoothly. Spoon over warm cake. Makes 1/2 cup glaze. |
