POTATO DUMPLINGS WITH COOKED
POTATOES
 
1 lb. potatoes
1 1/2 c. flour
3 eggs
Salt & nutmeg
Unseasoned croutons

Cook whole unpeeled potatoes (ideally steam potatoes). Mash peeled potatoes or better press through potato press and spread potatoes on a cutting board or like surface to cool. Then place all ingredients into mixing bowl and combine.

Shape into round dumplings, placing 1-2 croutons in center. Carefully place into boiling water that's lightly salted. Reduce heat when dumplings raise to the surface and let gently simmer for about 20 minutes.
