CHICKEN CORDON BLEU 
6 chicken breasts, boneless, skinless
1/2 lb. slicing Mozzarella
1/2 lb. sliced ham
1 stick melted butter
Bread crumbs

Cut breast in half. Pound and flatten between wax paper. Place slice of cheese and ham on breast. Roll. Dip in butter, roll in crumbs. Place in baking dish and bake at 325 degrees for 40 minutes.

This Cordon Bleu is terrific. The best thing about it besides taste is how easy it is to make. I used chicken breast strips and made mini Cordon's.

I also use Monterey Jack cheese. This recipe turns out perfectly every time I use it! BTW not necessry to dip in butter, the breadcrumbs will stick nicely to the chicken itself. I just use buttery cooking spray on the glass square baking dish.
