OATMEAL-MAPLE BREAD 
1 c. unbleached white flour
1 c. whole wheat flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. salt
1 1/2 c. raw rolled oats
2 eggs
1/2 c. real maple syrup
1 c. buttermilk
1/2 tsp. vanilla extract
1/2 tsp. lemon rind
2 tbsp. fresh lemon juice
4 tbsp. melted butter

Butter a medium loaf pan. Preheat oven to 350 degrees. Sift together into a large bowl the flours, baking soda, baking powder, and salt. Stir in the oats. Make a well in the center.

Beat together all the remaining ingredients. Pour this into the well, and mix with a wooden spoon--a few swift strokes--until all is combined. Turn into a well-greased medium-sized loaf pan, and bake 45-55 minutes at 350 degrees. Let cool in pan 10 minutes, then remove by rapping pan sharply.
