SPINACH SALAD 
Dressing:

1 1/2 tsp. dry mustard
1 c. white vinegar
4 tbsp. soy sauce
1 tbsp. fresh garlic, minced
4 tsp. fresh grated ginger
1/2 c. olive oil
3 tbsp. sesame oil
1/8 c. lemon juice
3 tbsp. sugar
3 tbsp. honey
1 tsp. salt
1 tsp. pepper

Mix all ingredients and simmer on the stove for 5 minutes, or until sugar is completely dissolved.

Spinach Salad (Individual Serving):

3 oz. cleaned and stemmed fresh spinach or baby spinach
2 oz. mandarin orange segments
1 oz. thinly sliced red onions
1 oz. sliced fresh mushrooms
1 oz. coarsely chopped walnuts
2 oz. sweet and sour honey ginger dressing

Toss spinach and dressing together, then top salad with remaining ingredients.
