SWEET POTATO PIE 
1 c. cooked, mashed sweet potatoes
1/4 c. butter
1/2 c. brown sugar, dark
1/2 tsp. salt
1/3 c. milk
3 eggs, beaten
1/2 c. light molasses
2 tsp. vanilla

Cream butter and sugar. Add potato and eggs, mixing well. Add molasses, milk, vanilla and salt. Stir to blend. Pour into unbaked pie shell and bake at 425 degrees for 10 minutes. Reduce heat to 350 degrees and bake 35 to 45 minutes more, until top is brown and pie is firm.
