CARROT SANDWICH BREAD 
1 c. finely grated raw carrots
1 c. brown sugar, firmly packed
1 tsp. baking soda
1 tbsp. cooking oil
1 c. boiling water
2 eggs
2 1/2 tsp. baking powder
1 1/2 c. all-purpose flour
1 c. whole wheat flour
1 c. chopped walnuts

Prepare standard loaf pan by greasing generously. Combine carrots, sugar, soda and shortening in bowl. Pour on boiling water. Stir just enough to mix. Let cool. Beat eggs and add to cooled mixture. In another bowl sift baking powder, salt and all-purpose flour. Stir flour mixture into carrot mixture. Stir in whole wheat flour. Fold in walnuts. Pour in prepared pan, let stand 5 minutes. Bake 1 hour in preheated 350 degree oven. Be sure to test for doneness before removing from pan to cool.
