KIM'S SQUASH CASSEROLE 
6 med. zucchini
1 pt. sour cream
1/2 c. butter
1 med. onion
Corn bread stuffing mix
1/2 c. grated cheese

Slice zucchini (1/4 inch thick). Cover with boiling water and cook until slightly tender; drain. Saute chopped onion. Add to zucchini. Mix sour cream with soup and add to squash.

Melt 1/2 cup butter and mix with stuffing mix including seasoning packet (will be dry looking). Put squash mixture in 9 x 13 inch baking dish. Cover with stuffing and top with cheese. Bake uncovered at 350 degrees for 30-45 minutes.
