ALBONDIGAS (MEATBALL SOUP) 
1 lb. hamburger
5 or 6 med. potatoes
2 or 3 carrots
1/2 c. rice
1/2 tsp. oregano
Garlic salt and pepper to taste
10 c. water

Add 1/4 cup rice to hamburger. Season with garlic salt, pepper, and a dash of oregano. Mix together and form into 1 1/2 inch balls. Place balls into a 5 quart pot with water and place on stove to begin heating. Peel and quarter potatoes. Slice carrots. Add to pot along with 1/2 teaspoon oregano, garlic salt, pepper and the remaining 1/4 cup rice. Bring to a boil and cook until vegetables are soft - about 20 minutes. Makes 4 servings.
